Cauliflower and Spiced Lentils

Ingredients:

  • 1 cauliflower
  • 2 tablespoons coconut oil
  • Pinch of Cayenne (optional) 
  • 1 Tbsp Maple Syrup or Honey
  • Handful of walnuts
  • 1 red onion finally chopped
  • 3 garlic cloves
  • 1/2 tsp tumeric
  • 1 tsp cumin
  • 1 can of lentils drained
  • 3 tomatoes chopped into cubes
  • 1 lemon
  • Salt and Pepper

Method:

  1. Preheat oven to 425

  2. Place Cauliflower on baking tray and cover in the oil, cayenne, syrup/honey and a pinch of  some salt and roast for 20 min

  3. Add walnuts to pan and roast for another 10 min

  4. On the stovetop, add oil and onion to a pan and gently cook for 5 min.

  5. Add garlic, turmeric and cumin

  6. Add lentils and tomatoes cook for 7-10 min on low

  7. Squeeze in half the lemon juice

  8. Mix cauliflower and lentils together and serve
