Super Greens Soup

- 1 tbsp olive oil
- 1 onion chopped
- 2 garlic cloves
- 1 leek chopped
- 2 zucchinis chopped
- 1 broccoli head (including stalk) chopped
- 1 bulb fennel chopped
- 5 cups vegetable stalk
- 1 tsp coriander
- 1 tsp cumin
- 1/2 tsp chilli flakes
- 1/2 bunch kale leaves
- Handful of baby spinach
Heat the olive oil in a large saucepan. Add onion, garlic and leek and cook for 5 minutes
Add zucchini, broccoli and fennel and cook for 3 minutes.
Add stock, ground coriander, cumin and chilli flakes and season to taste with pepper.
Bring to the boil, then reduce the heat and simmer for 10 minutes.
Add the kale and spinach and simmer for 5 minutes.
Use a blender (stick blender is best) and blend the soup until smooth.
For optional toppings, I suggest crushed almonds, fresh herbs or goat cheese
